This recipe makes about 6 waffles and it uses no oil and no butter. It's light and moist on the inside and crunchy on the outside.

Ingredients
1 cup oat flour*
1/2 cup wheat flour
1/2 cup all-purpose flour
4 tsp baking powder
2 eggs, separated
1 3/4 cup milk (soymilk, coconut milk, or almond milk works as well)
1/2 cup unsweetened applesauce
1 banana, mashed
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp sugar
1 teaspoon vanilla extract

Directions
1. In a large bowl, combine all the dry ingredients except for sugar (oat flour, wheat flour, all-purpose flour, baking powder, salt, cinnamon, nutmeg). Whisk until evenly distributed.

2. In another bowl, combine the eggs yolks, milk, applesauce, and vanilla. Beat the egg whites in a separate bowl until stiff. Slowly pour the egg whites into your wet mixture and stir. Add the sugar into the wet mixture and stir thoroughly*

3. Pour the wet mixture over the dry mixture and stir until the lumps are gone. Let it sit for 5 to 10 minutes*

4. Fold the mashed bananas into the batter and yay, you're ready to make waffles.*


*Oat flour can be made by grinding oats in blender until it has a flour consistency
*I know, it's a lot of steps but it'll ensure that you have nice fluffy waffles
*This is so the oats can soak up some of the liquid and the batter will thicken up
*Sometimes I add chopped dried cranberries into my waffles. But I tend to like sweet & tangy things.
