I found this recipe while looking for a quick and simple homemade hot chocolate recipe. I've made it about three times now and it's really yummy.
Ingredients
3 cups whole milk 1 cup evaporated milk 1/2 teaspoon pure vanilla extract 1/4 cup unsweetened cocoa powder 1/4 cup sugar 2 tablespoons cornstarch Pinch of ground cinnamon
Directions
In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.
Remove the hot chocolate from the heat just after it has come to a boil. The mixture should be super rich and thick! -----
I sometimes tweak the ingredients a little using fat free milk instead of whole and evaporated milk, maybe add a bit more chocolate sometimes, but it's good either way and the best part is that it's really simple and uses ingredients that most people (well, people who like to bake) have in their kitchens already. 4laugh

Mmm, seems like something I'd like to cook up on a rainy or snowy day in my heated house, snuggled in a blanket. cat_whee emotion_drool yum_tea
