When I make American pancakes I like to put applesauce or blueberries or cinnamon right into the batter. And I don't use an egg, just flour, milk & a little melted butter. They rise up fluffy & nice. xd

it certainly does! i've tried to make american pancakes, but they're never cooked in the centre gonk

How high do you turn the heat? If it's too low, that won't be good. Pancakes fry fairly quickly. You gauge when to turn the pancake over by watching the bubbles (& I try to peek underneath to see how golden its getting, but I'm sort of a messy pancake turner...). Try making them kind of small, too. And the batter shouldn't be too thick, sort of runs fluidly, but a little bit blobby as well, from your spoon. They will rise as they cook.
