They usually grow to be their normal animal's size. This is why the Dogs do not have their home Underground and are not able to be anthro in their homes. Dogs grow the largest of the three, but it's usually only to about a maximum of four and a half feet tall. Mice and cats get about as tall as they would be if they were as animals standing on their hind legs.
They wear clothes (generally), unless they have enough fur that it is unnecessary. However, the norm is that you wear clothes to remove all doubt about whether you're in anthro or not (if your anthro is more animalistic, that is).
Clothes disappear and reappear during transformation.
Anything more animalistic than the anthros and such above^ still count as anthros, but once you walk on all fours, you're an animal. Any more human than the "pushing the line" and you're human.
Instincts stay, they lose some of their abilities, but still have heightened hearing, sight (if applicable), and smell.
Their diet is still limited by their species. If you open a business, make sure to supply at least some of what that species can eat (see the Park for specifics).
