I know one for sure is hanging out up at Shearpoint. And you might want to watch out for that one, it's a pain in the a** to fight at first. The second time I tried to fight it I went in sneak, shot it with a bow. I killed it so fast I almost didn't think it was the same dragon. I'm still not so sure. The shout there you get is the funniest thing ever though.

If you roam around a lot you'll find many random encounters in respect to dragons. Lots of mine just tend to circle my head or drop down for a quick bite of Kai and whatever companion she's got with her at the time, usually Jenassa or Vorstag, we fight 'em back, they fly off.
Rinse and repeat. Except for those nasty frost beasties.

Shock Magic is your friend here, I don't know what your character build is, but shock spells are very good against mage's as it depletes their magicka reserves.

Character build is an argoinian mage
Still can't go wrong with shock spells, if you running low on Magicka then try shock scrolls or staffs that deal shock damage.

For as much as I love shock spells, they don't seem to be terribly effective against undead casters- 'course, part of my issue may have been using the low-level "Shock" spell against Jyrik at level 18 because I haven't yet purchased any higher-level destruction spells.
I really ought to fix that. sweatdrop
EDIT: Also, I'd like to mention that, not having completed the main question up through Whiterun just yet, I have yet to actually encounter a dragon, despite being level 20 now and having explored probably close to 1/3 of the eastern half of Skyrim. This is more than a bit frustrating, since I know have four words of power and no souls to use them with yet. I am, however, going to be dealing with the one at the tower soon, so I think I'll be seeing them more often after that.

For undead caster's I suggest both shock and fire. During my first play though I had at least 5 or six words, some with all three words found, before I even attempted the quest that starts spawning dragons afterwards.

Yeah, after wiping out about a quarter of his life, I ended up switching to flames, but I'd been having to keep a healing spell handy throughout the fight, so dual-casting both spells was a bit out of the question. He went down pretty quickly after I switched, though, which relieved me. I probably won't be playing Skyrim again until tomorrow, so I'll get to start having fun with the dragons after that.
