So what are different types of witches and what do they specialize in?
Like I've heard of Kitchen witches, Green witches, and Hedge witches but I don't really know what each of them do.

Green Witches, as I understand it, deal mostly in herbs, homeopathy, and various forms of craft that can be preformed in the kitchen or the home in general.
Hedge Witches are witches that walk the line between the physical world and an obscure, ill defined realm of magic, power, visions, etc. The "hedge" part of the name refers to the border between this world and the real one, they "walk the hedge".
There's also religious witchcraft, witchcraft that is an intricate part of deity worship. Many Eclectic Neo-Pagans practice a form of religious witchcraft. There are also a number of named and established traditions that practice religious witchcraft. They are their own religions with their own beliefs and practices, they include (but are in no way limited to) Wicca, Feri, etc.
Then there's secular witchcraft which is its own practice apart from any religion and does not involve any gods on a regular basis.
Then there is Chaos witchcraft, which for me is damn near impossible to define. As I understand it, its basically the craft for whatever the ******** you're in the mood for at the time.

Thanks Renkon. I was more or less just wondering about the different non-religious forms. I should have stated that.
So is a Green witch the same as a Kitchen witch then?

No. A green witch's focus for their craft is the garden and growing things. A kitchen witch's focus is the kitchen and cooking. They both use herbs and they are both "traditional" forms of witchcraft (i.e. mainly solitary, non-ceremonial, come-as-you-are). With this sort of thing, it's basically where you feel your craft is focused, because there's a lot of overlap generally.

Not JUST cooking, but yes, Kitchen witchery is done in the kitchen and Green witchery is done in the outdoors.
