Hello all!

I am wondering if any of you have ever made T'ej (otherwise known as Ethiopian Honey-Wine)

I just started the process of making my first brew, it is fermenting as we speak! (Ahh natural yeasts..<3)

It is one of the more simple wines to make, require nothing special except about 1 1/2 pounds of honey!

Quite simple to make! And oh so delicious. Considering it only takes about a month to be ready; it is great for beginners!

if someone would like, I will post a recipe and instructions-
perhaps some of you could share your tips and experiences with honey wine?! This is my first batch, so who knows if it will turn out yea?

And for those of you who have never had it, Next time you go eat Ethiopian cuisine be SURE to order a bottle( don't worry they are usually small) to drink with your Wot and Injera - It's probably important to mention this is for you 21+ out there it is alcoholic beverage..... now if you brew it yourself...well.. ninja

Would it be possible for you to post the recipe, hun? I'd appreciate it. :3

Wine is kind of a misnomer- wine is actually made with grapes, Mead, T'ej, Metheglin and Melomels are all made with fermented honey as the primary sugar- instead of the grapes. T'ej has a kind of bark and leaves added to it, Metheglin is made by adding spices, and melomels add fruits like berries.

I didn't use any, seeing as this is my first brew, I wanted to test the waters- and not spend money searching for it on the internet, or perhaps in the city. BUT. I have seen several sources that bypass the gesho all together, so I am trying these methods.

this has been my primary instructions though.

Homemade wine is worth the time! with a little practice it seems that it is way tastier than things you buy at slaveway or whatnot.

yes
here is how I started the 2 gallon T'ej

you need certain equipment..I used

2 two gallon jugs (one wide mouth, one regular)
an airlock ( a balloon can also work)
a long wooden spoon specifically for the honey wine (it helps contain the culture?)
cheese cloth
and funnel.

it is important to make sure that things are sterile.

and as ingredients go... lets see..

15-16 cups of distilled or boiled water, room temperature
1 1/2 pounds local raw honey
and several handfuls of fresh herbs or flowers from the garden.

1. cut up herbs/flowers small enough to be strained out through cheesecloth.

2. place herbs/flowers in wide mouth jar and add the honey

3.add the water just enough so you can still stir and then STIR VERY WELL. keep your wooden spoon atop the jar or somewhere it will not get contaminated, to keep the culture.

4. you may now place cheesecloth over the top of the wide-mouth jar and keep it in the kitchen out of direct sunlight. stir this mixture as often as you think about it, at least 2-3 times a day. after a few days or perhaps a week you should notice bubbling froth at the top of the jar.

5. now you strain out the herb/flower with cheesecloth/sieve/coffee filters...and pour liquid into second jar, sealing it with an airlock (or balloon- beware you WILL need to "burp" the balloon frequently)

6. after bubbling stops than the drink is ready, drink it or bottle it; I hear it can be aged for up to a year...

Hope this is helpful, you may want to look around for more ideas since this is a non-traditional honeywine (no gesho).

True, but I'm still always curious about new things. And even if he hates it, I think it's worth a shot.

I never knew that ! I'm not an expert with all things wine related. The most I use wine for is cooking with it.
