I was just re-watching an episode and I noticed that Lelouch geassed more than one person with one command. How could he do that if the geass requires direct eye contact?

They have to maintain eye contact with him, I believe. Not that he has to look at all of them.

Adding on to the above, he could have swept his gaze around to view of all of them, so each one would have had direct eye contact for a moment just to institute the Geass.

You don't have to maintain direct eye contact, you just have to give it. I believe that he swept his gave over the people so that they'd all get eye contact at one point or another.
In short: Lelouch is awesome, case closed.
