Alright, first off, your girlfriend needs to understand that kids should come in a few years after marriage, when everything is stable in life. What prompted her to suddenly want a baby, anyway? (Don't answer that if it's a personal question. It was meant to be rhetorical anyway)
You can tell her that you think you two should wait a few years before you factor in children. You could still surprise her with the ring, which would, aside from it's obvious purpose, almost act as a physical promise that you do want kids and will deliver on your promise. (Because it is possible that she may take your refusal of her demand as you saying "Kids? Oh HELL no!").

If you want to marry her, please go ahead. But be clear about the fact that you don't want to have kids right away. If you want to have them when you get older, say that too. Girls can freak out if their boyfriend has no wish of having childs at all.
When she does not take that well, please take caution when having sex, because women can get very tricky when they really want to have a baby, though from what I hear I think your girlfriend isn't the obsessive baby maniac, so you probably be fine.

I agree with the get married first idea. You also need to make sure that you are financially stable enough to support a kid. tell her its ridiculous how much it really costs compared to what you'd think it would be like. My mother has 7 kids, and she wasn't really ready for it, and shes in her early 40's
