This is just a topic where I will share recipes i use/invent, usually with pictures! I do alot of "comfort food" style Americana things with slightly healthier twists, as well as Mediterranean cuisine.

Let's Start with a Sheppherds Pie

(please note - i do not measure as i cook so amounts listed are approximations)

Ingredients:
1 lb of red potatoes
1/2 cp milk
2 TBS butter
1 cp diced carrots
1 cp green peas
1 lb ground turkey
5 or 6 slices of swiss cheese(we used a raw milk swiss here)
salt, pepper, curry powder

Instructions

quarter the red potatoes(dont peel) and put in pot of water to boil.
while you wait for that, brown the turkey in a frying pan, drain off excess grease.
when potatoes are soft (poke with a fork) drain and put potatoes in a bowl. mash with milk and butter. add salt, pepper, and curry to taste.
in an oven-safe container, add mashed potatoes with the edges higher than the middle. add browned turkey, carrots, peas, and top with cheese.
bake at 350° for 35 min. enjoy!

That sounds delicious, and so much better than the shepherd's pie my mom makes (potato flakes, frozen ground turkey log, canned corn.....YUCK.)

next i think i will post my "cheeseburger casarole"

Ingredients:
1 lb Ground turkey
1 box whole grain rotini
1 lb cheddar cheese
3 cps milk
ground pepper and chili powder

Instructions:
1. Put rotini in a pot with water and a little salt. bring to boil.
2. While pasta boils, brown turkey in a frying pan, adding pepper and chili powder to taste.
3. When pasta is at desired firmness, drain and run cold water over noodles.
4. In the pot you boiled the noodles in, put milk over medium-low heat and add cheese slowly by the handfull, making sure each handfull is fully melted before adding the next.
5. When cheese is all added and melted, add the cooked pasta and browned turkey. stir and enjoy!
