Title/Credits themes often turn out to be my favorites in the series. They're definitely way too overlooked.
Sealed Gods is my favorite title theme. Yes, even more than the SWR and UNL ones, though those are awesome. I often end up sitting on the character select screen for a while because I don't want the song to end just yet ,^_^
I also love Eastern Dream and Japanize Dream, but I find something about
Eternal Dream ~ Mystic Maple just completely enchanting, so that's probably my favorite. Again, even more than the SWR and UNL ones, though those are pretty flippin' awesome.
Maple Dream... is another favorite, although Eternal Dream basically steals the tune from it XP
As for Ending themes, I love
Shrine at the Foot of the Mountain and
Leave Flowers in Fantasy, although ending themes in the other games usually don't catch my attention too much.
On a related note: there may not be a full orchestral composition of Eastern Dream, but I'm well content with
this guitar arrange. On this video, it doesn't really start until about 40 seconds in. I usually end up listening through the whole 7 minutes, anyway.
