So, I made dinner last night; it's been a while since I cooked anything major around here. And I felt very proud of myself for the recipe I came up with.
I was going to post it in the "IRL Issues" thread, but this isn't an issue. Just food. :3 So, I decided to start a thread dedicated to food.

Chicken a la Jojo
Ingredients:
-2 bone-in chicken breasts
-seasoning of your choice [I use Adobo, the Goya brand]
-salt
-an assortment of cracked pepper
-dry basil
-3 tbsp of melted butter
-2 tbsp of butter, right from the fridge
-1/4 cup of vinegar
-olive oil
-4 garlic cloves
-oven pan, with a top or aluminum foil

Instructions:
1. Pre-heat oven at 425 degrees.
2. In a small bowl, pour in 1/4 cup of the seasoning, 1 tbsp of the cracked pepper and 1 tbsp of the dry basil, then mix them together.
3. Coat the bottom of the pan with a thin layer of olive oil.
4. Crumble the cold butter with your hands and cut the garlic cloves in half.
5. On a plate, place the 2 chicken breasts.
6. Under the skin, cut holes into the chicken, about 4 of them.
7. Rub the mixture under the skin of the chicken breast and all around the chicken, except the skin. If some falls on the skin, that's all right.
8. Place 1 crumbled butter in each hole, followed by 1 garlic. Don't close the skin, yet.
9. Repeat steps 6-8 on the second chicken breast.
10. Any left over butter, place under the skin, then close the skin.
11. Sprinkle some salt on the skin of the breasts and then place the breasts on the pan, skin up.
12. Pour the vinegar and melted butter over the breasts and around them, then pick the breasts up with a fork, so the vinegar and butter falls under them, and put them back down. [This step might be confusing, but just do it!]
13. Cover the pan with a top or aluminum foil and then place it in the oven for 40 minutes.
14. After the 40 minutes, uncover the pan and cook for another 20 minutes or until the skin is crispy.
15. And that's it!

Pan Grilled Steak
Ingredients:
-8oz of steak, cut into small cubes (any steak you'd like)
-steak sauce
-Worcestershire sauce
-balsamic vinegar
-minced garlic
-seasoning (I use Adobo, Goya brand)
-McCormick Steak Seasoning
-medium-sized pan

Instructions:
1. Cut the steak into small cubes and season with a little seasoning.
2. Preheat the pan on Medium High.
3. Once the pan is hot, spread the steak on the pan and season them with a little of the McCormick seasoning.
4. After 3 minutes, turn over the steak, with a spoon or spatula and season them some more with a little of the McCormick seasoning.
5. Keep tossing the steak after they're no longer red, then pour 1 tsp of steak sauce, 1tsp of balsamic vinegar, 1tsp of Worcestershire sauce and half a tsp of the minced garlic. Then cover the pan with a top or aluminum foil.
6. Lower the heat to Medium and continue to cook for 7 minutes or until the sauce has dried.

Fancy Potatoes with onions and mushrooms
Ingredients:
-3 Yukon Gold potatoes
-1 yellow onion, about medium-sized
-6 baby bella mushrooms, sliced
-4 slices of bacon
-1tbsp of vinegar
-1tsp of dry basil
-1tsp of Worcestershire sauce
-medium-sized frying pan

Instructions:
1. Wash the potatoes with water, then wrap them in a paper towel.
2. Place them on a plate and cook them in the microwave for 7 minutes.
3. In a small bowl, mix the vinegar, the Worcestershire sauce and dry basil basil.
4. Chop the onion into rings.
5. Preheat the pan at Medium High, once hot, cook the bacon.
6. Once the bacon is crispy, take them out of the pan and place them on a plate.
7. Leave the bacon fat in the pan, you'll use it to cook the potatoes, which should be done by now. Lower the heat to Medium.
8. Cut the potatoes into cubes and place them in the pan.
9. Pour the marinade over the potatoes, followed by the onions and mushrooms. Toss together and cover the pan with a top or aluminum foil.
10. After 3 minutes, toss again and cover.
11. Continue to cook until the onions are thoroughly cooked.
12. Cut the bacon into bits and toss into the potatoes, then serve.

Mini Pizza Breads (Takes time, but worth it <3 Great idea btw)

Ingredients: Makes 16
DOUGH
• 300g plain flour, plus extra for dusting
• ½ tsp salt
• 1 sachet (2 tsp) easy blend dry yeast
• 200ml warm water
• 1 tbsp oil, plus extra for greasing

FILLING
• 100g smoked ham
• 100ml tomato and chilli sauce
• 85g grated mature Cheddar cheese
• ½-1 tsp dried oregano

Method:
1. Sift the flour and salt into a large bowl and stir in the yeast. Make a well in the middle, add the water and oil and mix to a soft dough.
2. Turn out onto a floured surface and knead for 10 minutes or until smooth and elastic, then put into a lightly oiled bowl. Cover and leave to rise in a warm place for 1 hour, or until doubled in size. Meanwhile, line a large baking tray with non-stick baking paper.
3. Knead the dough lightly, then roll out thinly on a floured surface to make a rectangle.
4. Chop the ham. Spread the tomato and chilli sauce over the dough. Sprinkle with the ham, cheese and oregano.
5. Roll up tightly like a Swiss roll and cut into 16 slices. Place the pieces of dough on the baking tray. Cover and leave to rise for 30 minutes. Meanwhile, preheat the oven to 230°C.
6. Bake in the centre of the oven for 8-10 minutes, or until well risen and golden brown. Serve warm or leave to cool on a wire rack.

Lemon'n'Garlic Slow-Roasted Chicken

Ingredients:
-5lb whole chicken
-1 lemon
-3 garlic cloves
-seasoning of your choice (I use Adobo, Goya brand)
-zest grater or cheese grater
-toothpicks
-oven pot? (agh, I'm not sure what they're really called; here's a pic: my oven pot)

Instructions:
1. Zest the lemon in a bowl then shred the garlic, in the same bowl. Mix it with your fingers.
2. Season the whole chicken, even under the skin. Careful not to rip the skin, but if you do, use the toothpicks to close it up later.
3. Place some of the mixture under the skin and the rest use it to rub the whole chicken. Close the skin with the toothpicks if you need to.
4. Cut the lemon in half and sprinkle the juice over the chicken. Then, put the lemons inside of the chicken.
5. Transfer the chicken to the pot and cover it.
6. Leave it in the fridge overnight or for a couple of hours.
7. Preheat the oven at 325 degrees and slow cook it for 3 and a half hours, checking it periodically.
8. At the last 15-20 minutes, uncover it to "crispen" the skin.
9. Once the skin is red, the chicken is ready.
10. Enjoy your chicken!

This one is my favorite. It takes a lot of bravery to taste it, but it's hella easy to make. It's called Rainbow Soup. And no it's not a gay reference.

Ingredients:
-1 pomegranate, whole
-1 pepperoni stick, ends chopped off
-1/2 dragon fruit
-1 wad of wasabi

Line up all your ingredients, then click "learn" or "level up". It's as easy as 1, 2, 3, 4, 5!

Though, this might be a good time to post my pork fried rice recipe!

Pork Fried Rice

Ingredients:
-cooked white rice (assuming y'all know how to cook white rice)
-fried pork chops
-frozen vegetables: corn, peas and carrots
-soy sauce
-onion
-pepper
-corn oil
-wok
-wooden spoon

Instructions:
1. Cut the pork chops in squares and put them aside.
2. Cut the onion and pepper.
3. Turn on the stove on Medium-High and put the wok over it. Let the wok heat up, then pour a little corn oil in it, followed by the onions and peppers. Stir them.
4. When the onions and peppers are cooked, lower the heat to Medium, put in the rice and stir, followed by a couple of drops of soy sauce. Then stir until the rice is brown.
5. Pour in the pork and frozen vegetables and stir some more.
6. If needed, use a couple more drops of soy sauce. (Remember that soy sauce is very salty, so be careful)
7. Leave it alone for about 6 minutes, then stir again.
8. Once the vegetables are cooked, turn off the stove and serve.

Chicken a la Vinegar for two

Ingredients:
-2 boneless, skinless chicken breasts
-1/4 cup of vinegar
-extra virgin olive oil
-raw onion, cut into rings
-seasoning
-skillet
-aluminum foil or skillet top

Instructions:
1. Cut the chicken into strips. About 2" thick (5.08 centimeters) and 6" long (15.24 centimeters) and season. [I Googled the centimeter measurement; sorry if it's confusing sweatdrop ]
2. Coat the skillet with a thin layer of extra virgin olive oil and heat it up at Medium Heat fire.
3. Once the skillet is ready, place the chicken strips in the skillet and let cook for 3 minutes. After 3 minutes, turn the chicken and let cook for 3 more minutes.
4. Once all of the chicken strips are browned (basically, none of them should be pink anymore razz ), sprinkle the raw onion rings on top and pour the vinegar. Then, cover the skillet with aluminum foil or a top and let cook for 5 minutes.
5. After the five minutes, mix in the onion and let cook for another 5 or 6 minutes.
6. The chicken will be ready once the onions are cooked.
7. You're ready to eat! Enjoy. biggrin
