I have never been one for the store bought package where all you do is add either water or milk, maybe even an egg. They are overly processed and not all that worth it. So, here is the recipe I use for my pancakes.
2 cups of flour (I use whole wheat as it is healthier) 2 and 1/2 teaspoons of baking powder 3 tablespoons of sugar 1/2 teaspoon of salt 2 large eggs (if you can, organic free range and cage free)* 1 and 3/4s cups of milk* 2 tablespoons of butter (or margarine would work, I believe)
Either use butter or oil (I use Canola or Olive) on the pan, and flip when the pancake is firm enough to flip.
Now, this is not a very strict recipe. For example, I am not one for super thick pancakes. I like mine towards the crêpe realm, so I don't use the same amount of flour. Also, you can add in fruit. I have made some very nice banana pancakes, all I did was lessen the milk and blend it in my Cuisinart. I'd recommend mini chocolate chips, if that floats your boat, as it will be easier to flip.
For toppings, some nice powdered sugar and fresh fruit is always good, as well as Maple Syrup.
*if you are vegan, I believe you can still have these. Soy milk or rice milk (or whatever else) should still work, and for the egg you can use this quick one as a substitute
1 teaspoon of baking powder 1/2 teaspoon of baking soda 2 tablespoons of flour 3 tablespoons of water (or, I am sure the milk substitute will do the trick)
I will try and post pictures of my pancakes soon, as it is a fairly common breakfast on weekends for me.
