I am making a plan of what I am going to do to my guitar when I get it. I am planning on getting a set of three Lace Sensor pickups, and I am going to get my local custom shop to put them in, and I want to know, how long should it take to replace three single coils in a strat, so I can work out the labour costs.

Soldering really isnt as hard as it seems. Its like welding at very low temperatures (comparatively). Also the Sperzels wouldnt be hard to install at all (unless it requires you to ream the holes for them to fit. As for the nut, even I'm not crazy enough to try that, and everyone knows how DIY i am..

I have found repair/custom work to be relatively inexpensive. However, nobody touches the wiring on my Jazzmaster, until they can prove that they know something about these unique guitars. The wiring is different from strat/tele circuits.
For 3 strat pickups, the cost should be minimal.
