Fiddlers Green Tea, share with the unwashed masses (okay... just me) what the difference between Country Ham and City Ham is, please... surprised I know! City Hams don't taste good or look pretty, and they arn't polite, and they've got no sense of style... Sorry about that, I really couldn't help it. redface

Cassidy Peterson My mom and I also always make sure to eat any cherries in the jar no longer covered by juice once it's been poured >_> <_< Bweheheh *giggles* heart sweatdrop How can you tell the difference Tea?

Well, usually my family has turkey or ham as the main dish for christmas dinner.As far as side dishes go broccoli casserole is easy to make and tasty (at least to me it is any lol) , mashed potatoes are pretty basic side dish that goes pretty good with turkey and ham.
Im cooking dinner for the winter solstice, and im making rosemary pork tenderloin with roasted vegetables (and *cough* mashed potatoes..lol cant do with out those lol)
Not sure what the procedure for posting recipies is here..but I have 2 one for the broccoli casserole and rosemary pork tenderloin/roast

Well I kinda have the same thing going on during the holidays and this year I get to cook everything. My family usually has the traditional foods (ie. Mashed potatoes, turkey, etc.) as well as asian dishes. My holiday dinner this year is probably going to be Ham, 2 whole chickens with stuffing (I hate turkey), mashed or roasted potatoes, spring rolls, veggie stir fry, and this fried noodle thingy my mom taught me how to make.

City ham is "in it's own juices" country ham is not. I'd go City Ham with a Brandy/Mustard/Snap crust if it were me.

Here is the recipie I mentioned in an earlier post
Rosemary Pork Roast
4 Cloves Garlic, Finely Chopped 1 Tbsp. Chopped Fresh Rosemary or 1 Tsp. Dried 1 Tsp. Grated Lemon Zest (Rind) 1/2 Tsp. Salt 1/4 Tsp. Black Pepper 1/4 Tsp. Dried Thyme 1 Tbsp. Fresh Lemon Juice 2 Tbsp. Olive Oil 1 Boneless Pork Loin Roast (3 lbs)
Gravy
2 Tbsp. All Purpose Flour 1 Cup Chicken Broth Mixed With 1 Cup Water
Preheat Oven To 450*
Mix together Garlic, Rosemary, Grated Lemon Rind, Salt, Pepper, Thyme, Lemon Juice, and Half of the Olive Oil in a Small Bowl. Using your hands, rub the mixture over the top and sides of the Pork.
Spoon remaining Olive Oil into flame proof roasting pan; spread evenly over the bottom of the pan. Place the pork in the pan.
Roast the Pork @ 450* for 30 minutes. Lower the tempreture to 350* and roast for 30 more minutes or until instant read thermometer inserted in center reads 160 degrees. Remove Pork from pan to cutting board and let rest for 15 minutes.
Gravy
Pour all but 2 Tbsp. fat from the roasting pan. Sprinkle flour evenly over drippings in the pan. Place pan over medium high heat; cook for 1 minute, scraping brown bits from the bottom of the pan. Stir in Broth Mixture; cook, stirring, for 5 minutes or until thickened. Strain Gravy through a fine mesh sieve. Pour into a sauceboat and serve with sliced pork.
Serves 8
