Honestly, I think one of the reasons why they retired the slogan of "Gotta catch 'em all!" is because the writers of the show wanted to express that there is more to the Pokemon universe than being a master trainer or great gym leader and catching them all.
This is evident with the addition of different classes, like Pokemon Watchers, Coordinators, Rangers... An expanded universe means more plot lines and characters. I'm pretty sure that Ash and Pikachu will continue to be the main characters of the series. After all, Pikachu is the mascot of Pokemon, but the fact remains that Ash really is much more of a dynamic character than most people think.
Yes, he acts childish, but hello! He is a child and has a lot of growing up to do, but I can confidently say that he's changed a lot since being shocked by Pikachu in Professor Oak's lab. He's more mature now.
