Mischief managed.

I play bass- the sexiest instrument in the world.
Nintendocore bands are usually bass, guitar, vocalist and someone who works the keyboard.
Sometimes, though, the lead singer starts and stops prerecorded tracks on a korg machine (not sure whether to call it a synthesizer or not)

If I was to list every instrument I have played,am playing, and am capable of playing, then I can honestly, truly say all of them. And for nintendocore, the most prominent instrument would be a synth that someone toyed around with so as to imitate chiptune-type sounds.
The synth style used by Erik Engstrom, of HORSE the Band, is a perfect example.

Bass, acoustic guitar, drums, vox, keys, mixers/synths, and electric triangle. XD
Some Nincore bands have been known to use actual gameboys. There is a mod device that works as an eight track loop, and some are double rigged to two gameboys, producing sixteen tracks. But this is only one 'instrument.' The others listed by Cap'n are commonplace in nincore.

Well, you have to pay quite a bit to get one of the paks, each pak making 8 tracks. And If you want to make 16, which is what Maru used in that clip, you need to either start, then sync them up like he did, or get a dual pak rig, infinitely more expensive. lol But I LURVE IT!
