If you gain more territory, you gain more territory to sell stuff without interferance and get more money, you gain stuff to survive, you take your enemies stuffs too sometimes and etc.. And not all gangs kill eachother over territory, self-defense, would you not defend yourself when someone attacks you? Some just like feeling powerful and badarse. Everyone within a gang is an individual and they do it for many different reasons, some people even want to escape the gang life but have a hard time doing so because of past transgretions and affiliations. There are other things you can do to survive, but people like the easier way out, and I know it's not easy to get a job when you're branded a criminal with not much education, it's still doesn't give you an excuse to play the tragic hero but it's understandable.

In no way do I encourage gang wars and everyone knows my morality stand-point. =P
