Since no one has made a suggestion for this week, I'd like to suggest this recipe. It is one of my favorites and my kids ask for it all the time. The nice thing is you can serve it over hot noodles, rice or biscuits. UniKorn Tiger Here is my easy recipe Main Dish Skill Level 1 Ease Level 1 Prep Time 5 minutes Cooking time 10 minutes Total time from start to table 20 minutes White Stroganoff Serves 6 1 1/2 lbs of Beef ( I prefer Round steak, but any decent cut of meat including skirt steak works... ) 3 8ox pkg's of cream cheese, (generic works fine) 1 cup milk 1 4oz can of mushrooms (optional) Salt to taste Pepper to taste Onion to taste Garlic to taste Here is how I make it I put 2 tablespoons oil, can be olive, canola, corn or any other type in a large skillet, and start to warm, I cut the meat into bite size pieces and saute, if you prefer onion chunks and garlic pieces now would be the time to add it to the skillet. Add the meat and brown to your preference, rare, med or well done. Once the meat is to your liking, cube up the cream cheese and add it to the meat mixture, stir frequently, once cheese is almost completely melted, slowly add milk and mix well. Add well drained can of mushroom, let it cook over slow heat for 5 minutes. Take of heat and let it set for 2 minutes and then serve of hot noodles, rice or bread. When I make this I use seasoned salt and garlic salt with dried minced garlic instead of using onions and actual garlic since my kids are not fond of finding the pieces when they bite in. This recipe is easily adjustable for the number of people you have for every 2 serving use 1/2 lb of meat, 1 8oz block of cream cheese and 1/3 cup of milk. If the sauce is too thick, add more milk, if it is too runny cook a little longer

TWICE BAKED POTATOES!!!
olive oil 5 baking potatoes 3/4c milk 2tbsp. butter 1 tsp pepper 4oz(1/2 bag) kraft shredded cheddar cheese
Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.
Meanwhile, cover the bottom of a skillet or frying pan with olive oil add onions to oil and sautee until tender (About 5 minutes) Remove onions from heat; drain excess oil. Add onions to medium mixing bowl.
When potatoes are done, take out of the oven and cut the top 1/4 off of each potato (the long way) Scoop potato out of the shell and into mixing bowl with the onions. Add milk, butter, and pepper to mixture. With mixer, combine ingredients until well blended. Add cheese and mix with spoon.
Place potato mixture into a medium sized plastic bag. Twist bag (bag should appear as a pastry bag) with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. place on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes.

I'd like to say that I've done this recipe before, it turns out ok, but watch out with the milk it can make things a bit messy. I use butter with a little less milk to make things extra rich, and I also add crunched up bacon to the potato mix. When finished I plop on sour cream and chives. Yummeh.

Name: Kurimanjuu (chestnut Manjuu) Skill Level: 2 Usual prep time: 30-60 Minutes
Ingredients Eggs: 1 Sugar: 3-1/2 tbsp. Baking Soda: 1/5 tsp. Water: 1 tsp. Flour: 1/2 cup Candied Chestnuts: 4 White bean jam: 9 oz.
Egg yolks: 1 or 2 Mirin (sweet sake): little bit Ground flour: proper quantity
Directions 1) Beat eggs, and blend with sugar until creamy 2) Dissolve baking soda in water and blend with mixture from step 1 3) Add ground flour and lightly blend * At this time, texture should be firm. if it's too tender add more flour 4) Roll into 8 equal rounded-off cylinders 5) Finely mince chestnuts and blend with white bean jam. Work over heat, cool down and split into 8 parts 6) Wrap the chestnut mixture from step 5 with the dough from step 4, creating little bundles 7) Wet with the egg paste. If dry, wet again 8 ) Line up the manjuu onto a cooking sheet and place in oven. Preheat to 160 C and bake for about 12 minutes * When making the dough, if it's not sticky enough, work in a lightly chopping manner * Once the desired texture is reached, carefully wrap the bean jam and quickly bake * Shapes other than the bundle form are okay- like the chestnut or poppy shape
Extra comments: This Japanese treat makes a great snack too

I've got two super-simple recipes. They're both probably sooo simple they won't be recipe of the week, but I'll suggest anyway.
Pigs-in-a-blanket
Skill level: 1 Ease level: 1 Prep time: 3-5 minutes Cook time: varies, check crescent roll container
Ingredients: Li'l Smokies cocktail weenies Pillsbury pre-cut crescent rolls (simply multiply by need, one roll os crescent rolls makes 16, one package of cocktail weenies enough for 32 with extra)
Utensils: cookie sheet knife
Unroll the crescent rolls and peel apart. Cut each crescent roll in half, then wrap around one cocktail weenie. Put on cookie sheet and bake until golden brown (follow crescent roll instructions but check often).
Note: they're really good snacks, they go well with ketchup and barbeque sauce, as well as my super-secret sauce, which is just mayo and ketchup mixed together. Viola!
Super-Speedy Spaghetti
Skill level: 1 Ease level: 1 Prep time: 2-3 minutes Cook time: 10-15? varies
Ingredients: angelhair pasta ground beef spaghetti sauce
Utensils: pan for browning meat and cooking sauce pot for cooking pasta spoons, etc.
Cook the angelhair until done (remember to sprinkle salt into the water before boiling), while doing so brown the meat and then add the spaghetti sauce. Once heated through, plate and chow!
Note: use ground turkey for healthier recipe, and homemade spaghetti sauce goes great too! Any variety of sauce works, from traditional to meaty to chunky mushroom to vegetable. Sprinkling with parmesan is always good too. Super thanks to my best friend for this recipe!

A recipe that I have found to go good over rice is Vegetable Kurma. This recipe is from India and has a really great flare to it smile
Vegetable Kurma Recipe from Sriram Ingredients 2 cups Vegetables 2 Onions cut length-wise 2 Green chilies cut length-wise 1 tsp Coriander powder 1 1/4 tsp Salt one pinch Turmeric powder 1/2" Cinnamon stick 2 Cloves 2 Cardamom 2 tblsp Coconut powder 1 tsp Khus-Khus (poppy seeds) 1/4 tsp (3 cloves) Garlic 1/4 tsp powder (or 1/2" fresh) Ginger Directions Put a reasonable sized vessel on the range and heat oil. Add cinnamon, cloves and cardamom and fry for 2-3 minutes. Add onions and green chilies and fry till onions turn brown. Add garlic + ginger paste and fry for a minute or so. Add vegetables and fry for about 3 minutes. Add Water (about a cup or two). Let the vegetables + turmeric powder cook. If you are using canned or frozen vegetables skip the above step.
Add coconut paste, khus-khus, salt and wait until cooked.
(Note: Cook on low heat.)

Raspberry Pudding - Delicious and Nutritious! Makes 4 (small) servings, but will serve 2 decent sized bowls
You need a blender or food processor 1 of those antisceptic packages of Silken Tofu, 12oz? 8oz frozen raspberries (or fruit of your choice, You could probably use fresh if on hand) 2 TBS honey (or to taste for the sweet teeth out there) 2-4 mint leaves for garnish (optional)
Set aside mint leaves and few raspberries for garnish. Run under cold water to thaw garnishing berries. (optional)
Blend all remaining ingredients in a blender or processor until smooth. Spoon into bowls (rubber spatula is ideal) and garnish with mint leaf and a few raspberries if desired.
