Like almost everything I cook, I try and adjust recipes for health, taste, and texture. This is what I came out with after a few attempts at a few different recipes and some tweaking.
Breaded Asparagus Ingredients: Trimmed Asparagus Spears 1 Beaten Egg Panko Bread Crumbs 1-2 tablespoon olive oil Grated Parmesan Cheese (( Extra cheesy, Woot! ))
*Cook asparagus until tender, but still requires a little pressure to fully cut through, in water and drain. *Combine the grated Parmesan cheese and Panko bread crumbs onto a baking sheet or large plate. *Beat the one egg, then dip the asparagus into the egg, roll the egg covered asparagus in the cheese and bread crumb mix, and place on a baking sheet. *Drizzle a little olive oil over the the breaded asparagus and place in a 450 degree oven for ten minutes. While asparagus is baking proceed to make the honey-ginger sauce from cookingcute.com.
Honey-Ginger Sauce taken from www.cookingcute.com Ingredients 1 tsp. ground ginger 1 tsp. garlic powder 1/3 cup tamari 1/3 cup orange juice 1/4 cup honey 1 green onion, chopped
*Mix all ingredients well. *If you are using as a marinade, mix the ingredients in a big ziploc bag, throw in whatever you're marinating and turn the bag to coat. I like to marinate salmon for at least 30 minutes, although overnight is best. *If you are using just as a sauce to mix into onigiri filling, you don't need to cook it. Just use it as is. But if you've marinated meat or fish in it, and then you want to use it as a sauce, cook it for a few minutes first on the stove or in the microwave.
