The armory is a place where you can store all your Role play weapons and other weapons in a realistic style format, in a database which categorizes it. You can also share your weapons, allow them to be linked so others can look at them (without you having to explain how they work every rp you go into) and look at others weapons, to try to decide if you would want to use theirs or create your own that's expanded on them.
As well, you can get ideas and simply other useful information from it to try to make your role-play more realistic and fun. Woot, an armory!

Do we have to join the armory guild, and do we just make our own weapons or our character's weapons in like a list format?

Well you don't HAVE to, but it is very beneficial to have a reference web page for your weapon >.<
