Ok So Roast is on sale and you pick up a fair sided one that will fit in your crock-pot .. Here Goes
Start this going in the am before work

1 Roast (sized to leave a little room in the pot)
5 peeled and quartered potatoes
3 onions sliced
2 cloves of garlic
3 cups water (depending on pot size)
2 large carrots chopped
3 celery stalks chopped

Place water into the crock pot place 1.5 gloves of garlic into the water with it .. now cut small 'X' into your roast insert pieces of onion and garlic alternating between them into your roast ..insert roast into pot. add carrots potatoes celery onions into the pot around the roast


Turn up to high go to work .. when you get home at dinner time it will be ready for you

You can the night before preprep all of your veggies potatoes and your roast then throw it all in in the am and off you go smile

Also .. use the left over juice for gravy ..

1/4 cup(s) beef drippings or fat
1/4 cup(s) Five Roses All Purpose Flour
salt and pepper to taste
2 cups water
Instructions

Mix some of the flour with the water to make sure it doesn't clump
Remove meat from pan and keep warm. Pour off fat and drippings and return 50 mL (1/4 cup) back into pan. Add flour and cook until mixture thickens and browns. Add liquid and cook over medium heat, stirring constantly until gravy thickens and comes to a boil. Season to taste.
Yield: 500 mL (2 cups)

Then save the gravy and the left over roast for Hot Roast Beef Sandwiches the next day
