One of my favorite meals is just old fashioned Roast Chicken and Stuffing.

Preheat oven to 350. Take a washed whole chicken and take a mixture of garlic (minced or powder), lemon pepper, chili powder, and celery salt and rub the inside and the outside of the chicken. Set it aside and in a bowl mix your favorite stuffing. I use whatever I have in the house. 4 cups bread any flavor or corn bread cubed are my favorites. Chop an onion and some celery and fresh parsley and/or sage if you have it. Stuffing can be made to fit anyone's palette. Make it simple or throw a couple of things in to make it gourmet. 2 tablespoons butter, 3 eggs and a couple of cups of chicken broth or water will do. Dried parsely if you didn't have fresh, sage as light or as heavey as you like it. Black pepper and a little salt to taste. Now if you want to fix it up add some of these items: oysters and waterchests, apple and sausage, walnut and raisin are some of the combinations I have used. Yum!

Oil the pan, stuff the chicken with half of the stuffing, pour a cup of water, (more if you make gravey) in the bottom of the pan and "set" the chicken in the water and try not to wash off the rub. Place in the oven for 45 minutes and take out, drain chicken and place the rest of the stuffing around it and back another hour or until the leg bones come loose at the ankles. Okay gotta go eat mine. Oh boy, oh boy, oh boy!
