Hmm my favourites tend to shift (in and out of existence), but currently, I think these fit nicely:
White - Auramancer by Rebecca Guay
Blue - Mindwrack Liege by Richard Whitters
Black - Sengir Nosferatu by Scott M. Fischer, or Smoldering Butcher by Zoltan Boros & Gabor Szikszai
Red - Moonhold by Mark Dringenberg

I know this seems like a cheap cop out and I know it's probably hard to believe but the best card art I've ever seen in all five colors were specific land art. So, to make it official.

from a technical point of view, all those who named lands cheated >< lands do not have a colour (unless listed on the card, silly dryad land) since colour is determined by the colour mana required to cast it, not by the border or colours of mana it produces. Not that it really matters, i absolutely love the art on a lot of basic lands too. in particular the arena lands for the mirrodin block, you could put them side by side to make a panoramic view of all of the mirrodin world, each cards art was a portion of a large mural cut up.
