INGREDIENTS
1 (1 ounce) package taco seasoning mix 1 (16 ounce) can refried beans 1 (8 ounce) package cream cheese, softened 1 (16 ounce) container sour cream 1 (16 ounce) jar salsa 1 large tomato, chopped 1 green bell pepper, chopped 1 bunch chopped green onions 1 small head iceberg lettuce, shredded 1 (6 ounce) can sliced black olives, drained 2 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese.
Garnish with black olives

I really love this kind of dip, and it goes pretty fast. The only thing I would say would be that if you are serving this at a party to take out the taco seasoning to make this a vegetarian option for those who attend who don't eat meat. You can season the beans using other spices, or not, since there are so many flavors in the dish already. I never season the beans when I make it, but it wouldn't be a bad idea.

I had a really good 7-layer dip at a mexican restaurant downtown, and the grocery store I work at sells pre-made ones.

My family makes a similar version, but we fry hamburger meat with the beans to hide the beans from some of the smaller/pickier kids, and after we add the cheese we pop it in the oven just long enough to melt it and get it a nice slighty golden color.
