When's the best time to buy and sell items? I've heard it's best to buy at night because items are slightly cheaper. And for monthly items buy a few weeks after it comes out. I'm I correct?

I find the best time is during updates and evolutions. People get in a hurry to get a sweet item, they put their other stuff in the MP real cheap to make a quick sale. Skim up those and immediatly put it back in the MP for 1g less than the lowest.
(I just got a spartan cloak for 1mil and I'm looking to make 100k-200k profit off of it.)
Also its good to have like 2-3 of each evo item so when they evolve(Wednesdays & thursdays) and the price skyrockets you can sell it then buy it back in a week for a good profit. (Mondays and Tuesdays the week after its evo is a good buying back day.)
Also it the next evolution is unpopular it can lower its price (biacamella). So be aware of that.

Date wise buy sealed letters about 2 weeks after they're out, I can find em for 14k around that time, then sell em on the 15th.
Sell MC's around that 2 week period because when it comes closer to the 15th they will deflate.
Other then that follow Lupa's advice, and take her warning, I just got a little screwed over (not really) on buying into a hoard of Dec's 07's and it looks like they're becoming unpopular, all that really means for me though is I have to wait longer to sell.

The December will be a fine item in the future. I am using more of a buy and hold strategy lately. I buy 10 sealed, sell them on the 14th/15th using the proceeds to buy quality items and stash them.
