Ha! I was just about to start a thread that would practically be an answer to this.
Eggplant is largely unappreciated. And bison and buffalo is making a comeback (I won't buy it just yet, I only will when the price goes down to the price of beef). Definitely try working with garden fresh herbs, though they are more popular than you think. Tomatillos (or something like that) are largely unknown, but you can get them pretty easily. Pita and flatbreads are very good, try the flavored kinds. Salmon needs someone to populate it in not-so-much used cooking methods and flavors. Liquid smoke, though slightly expensive, can be diluted and used for a variety of things for a smokey flavor. You can make your own liquid smoke, but I forget how. I know Alton Brown did a special on Good Eats. Use lettuce in cooking, not many people think of lettuce as a component of cooking, same with chocolate, cocoa, and cinnamon. You can do anything.
