I make this all the time now. Everybody loves it to bits and pieces. I make it once a week, so I've pretty much perfected it.
Ingredients are APPROXIMATE. I never measure when I cook.


Ingredients
1 1/2 cups of diced vegetarian chicken (or real if you want)
4 cups of cooked rigatoni noodles
1 cup shredded pepper jack cheese
1 can peas (drained)
1 can corn (drained)
1 tsp onion powder
1 tsp oregano
1 can of cream of potato soup
3/4 can of water
Salt and pepper
Casserole topping of choice: fried onion, stuffing, potato chips, crushed ramen noodles.

Preheat the oven to 450 degrees F.
Cook the noodles until done. Drain. In a large pot, combine noodles, chicken, peas, corn, cream of potato soup, and water. Heat on high and stir continually. Add onion powder, oregano, and cheese. Heat until cheese is almost melted. Salt and pepper to taste.
Pour into a large casserole dish. Cover the top with casserole topping.
Bake for 20-25 minutes.
