Here's a recipe for basic fried rice. When I experiment with more, I'll post the recipes here.
Basic Fried Rice
1-2 green onions 2 large eggs 1 tsp salt pepper to taste 4 tbsp oil (for stir frying) 4 cups cold cooked rice 1-2 tbsp soy sauce (or oyster sauce)
Wash and finely chop the green onion. Light beat the eggs with the salt and pepper. Heat frying pan and add 2 tbsp oil. When oil is hot, add the eggs. Cook, stirring until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan. Add 2 tbsp oil, and rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in soy sauce. When rice is heated through, add the eggs back into the pan. Mix thoroughly. Stir in green onion. Serve hot. *I cut this in half cuz it makes a LOT; also, I like the egg, so I'd double the eggs personally.*

Traditional Mandarin Fried Rice
Canola oil 3 eggs 2 tbsps minced garlic 2 tbsps minced ginger 1 bunch chopped green onions 4 strips of cooked bacon 8 cups cooked day-old long grain rice 3 tbsps thin soy sauce ½ tsp white pepper salt to taste
In wok, add 2 tbsps of oil and quickly soft-scramble the eggs. Remove the eggs. In same wok coat with oil and stir-fry garlic and ginger. Add green onions and bacon. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately. *I haven't made this myself, but a friend made it and it was quite tasty. Also cutting it in half is recommended.*
