Kansai! Has a lot of historical/cultural things (especially in Kyoto and Nara), and a lot of great food, like okonomiyaki and takoyaki (esp. in Osaka). Plus the dialect is fun and you can get big city excitement (Osaka, Kyoto), more mid-size city fun-w/o-super-huge-crowds (Kobe), and the peace and beauty of a more rural-type place (Nara)
Other great places: Hiroshima/Miyajima - I was really glad I got to visit the a-bomb museum and Peace Park. Miyajima, which is off the coast of Hiroshima, is gorgeous! and they have a delicious snack called Momiji manjuu (best in chocolate form). There's all sorts of fun things to do there for a day.
Sapporo - I loved the food in Hokkaido (I like food a lot, so that has a lot to do with my choices...). It's famous for Genghis-khan (all-you-can-eat lamb that you cook at your table), ramen, and soup curry (my favorite!), among other things. I went during the snow festival in February, and it was amazing (tons of beautiful snow and ice sculptures)! If you don't make it for that though, there's also skiing and hotsprings.
Shirahama - This is actually a popular seaside resort in the summer, I hear, but I went in December. It has a ton of hotsprings, including this gorgeous outdoors one that is right on the ocean (separated by just a few rocks) called Saki no Yu. Also, there's a zoo-themed amusement park that's a lot of fun (I touched an elephant!).
Of course, you should probably go to Tokyo, just because it's Tokyo. I actually didn't go, so I can't say anything about it.

Tokyo is pretty good for shopping, and basically everything important is in English too. Although, it's supposed to be really crowded and there might be some creepy people there. xD The closest I'm been is Yokohama anyways.
I want to go to Kansai someday, it sounds like a really fun place. I love their dialect, it's so adorable! <3
I really liked the Hiroshima A-Bomb museum when I went there some years ago. Everything's also in English at that museum.
I personally really liked Kyoto, because of all the temples and old buildings there.

New Years is a really big holiday. It's also a family holiday though, so I'm not sure if there's much to really do besides visit a shrine at like midnight. There are a bunch of good sales right after though, so it would be nice to be in a good shopping area.
