I have always pictured Fred and George to have the most unique eyes out of all the Weasley's kinda like a light brown with speckles of really bright green.

Sarah, congrats on your Gwee! Ron's eyes are definitely blue; it's actually a question we use in the quiz for guild membership.
On to the twins: the Phelps twins have dreamy hazel eyes, that warm brown with gold sparks mentioned. I checked the Lexicon, here's what they say about the Fred and George:
APPEARANCE Eyes: unknown. Hair color: Flaming red. Other characteristics: Freckles. Body type similar to their shorter, stockier brother Charlie (GF5). For Christmas their third year, Molly gave them blue "Weasley" sweaters, one with a large yellow F on it, the other a G (PS12).
So there is support for blue eyes, Molly made Harry a green sweater to go with his eyes, and perhaps did so for the twins, remember though she also made maroon for Ron and his known blue eyes.
Hmmm....to get the canon answer on the twins, we may need to go to Jo's next Q&A session and put it to her directly. Carnegie Hall in New York tickets for Friday October 19 are available to the public via a special sweepstakes which will close in one week on August 31.
J.K. Rowling will be doing four events - one public event and three school events: one in Los Angeles at the Kodak Theater on Monday, October 15 at 10:00 a.m.; one in New Orleans at the Ernest N. Morial Auditorium on Thursday, October 18 at 10:00 a.m.; and two in New York City at Carnegie Hall on Friday, October 19 at 11:00 a.m. and 7:00 p.m. TICKETS WILL NOT BE SOLD FOR THIS EVENT; the schools attending the daytime events will be selected by the public school system in each city; the evening event in New York is ticketed by sweepstakes only.
