yeah, I was looking on Deviantart and came acrost these adorable plushes that I guess are jointed and can be in different poses... and the jointing system was '5 way Cotter Jointed'
what exactly is that?

It appears that cotter jointing is a system of disks and pins make the joints on a plushie (probably legs and arms). The disks probably go in each side of the joint and then they're pinned together with some type of cotter pin. It looks like 5-way refers to the fact that both arms, both legs, and the head are jointed in this way.
