After countless times of seeing those Campbell's Chicken Noodle Soup commercials, I decided I really wanted some. The only problem was that I don't eat chicken. So, I set off on a mission: Vegetarian Chicken Noodle Soup.
Vegetarian Chicken Noodle Soup
Ingredients: 2 Cans Vegetable Broth Udon Noodles (*Or homemade: see bottom) Any Kind of Vegetarian Chicken (Excluding any breaded chicken) 1 TSP Minced Garlic Pepper Salt
Start by preparing the udon noodles. Bring a pot of water to a boil. Take however many noodles you want, depending on how much you want in your soup, and break them into small pieces. Add the noodles to the boiling water. Boil 2 minutes and add 1/2 cup of cold water to them. Bring the noodles back up to a boil for 1 minute. Add another 1/2 cup of cold water. Once again, bring the noodles back up to a boil. Add another 1/2 cup of cold water and a bit of salt. Set heat to lowest setting. Cover the pot for 15 minutes. Drain. In a large pot, pour the vegetable broth in. Add the garlic and begin to heat. Meanwhile, chop the chicken into small pieces. Add the chicken and noodles to the broth. Bring to a boil. Salt and pepper to taste.
Nice for a cold day. Or for when you have a cold. whee

It's a simple recipe. I actually don't know that I ever had real chicken noodle soup when I ate meat. I could only base it off of pictures and such. xd But, it's pretty tasty.

Well, I never really even liked meat to begin with, but, in third grade, my teacher read us this book that made me really sad (it had an animal slaughter scene). I came home that day and stopped eating meat. I live in a vegetarian community, so, it's really easy for me to find all kinds of delicious substitutes and such. My schools even served vegetarian lunches; no meat at all.
