I think you have to be level 30 before you can start getting bonus jobs.

-To unlock other jobs, you need to be lv 30 first to accept the unlocking quest. -Each job's unlocking quest are separated, you have to do them one-by-one. (you can choose to unlock only the ones you want) - Unlockables are : Comes with the FFXI Client but have to do quest to unlock : Paladin, Dark Knight, Ranger, Beastmaster, Bard, Requires Rise of Zilart : Summoner, Ninja, Samurai, Dragoon Requires Treasure of Aht Urghan : Blue Mage, Corsair, Puppetmaster.... (Also require to do the quest to go to the Aht Urghan Side)
---------------------------------------------
-To be able to ride a chocobo, you need to have a chocobo license. And the quest for chocobo license is minimum lv 20. - Once you have a chocobo license, chocobo in 3 primary towns (Sand'Oria, Bastok, and Windurst) can be ride at lv 15 and above, while in Jeuno and telepoints are 20 and above. - To start to raise your own chocobo, you must have a chocobo license first, and at least 200 or 300k of money to raise properly it to a good status. Not raise him/her up and dump in the end.

Uhm - just checking to make sure that you are aware that you can switch to any of the basic jobs (warrior, thief, white mage, black mage, red mage, monk) at any time by talking to your moogle and picking "change job".
As sylphine has so well explained, you will not be able to change to any of the advanced jobs (as she has listed) without completing the appropriate quest first (and you'll need lvl30 to get those quests)
You will be able to assign a subjob only once you have reached lvl18 and have completed the relevant quest (either in Selbina or Mhaura).
You can change jobs at any point you like and you will not loose any levels or skills that you can gained on your other jobs. Basically you can flick back and forth as much as you like smile
