Actually... Skim Milk is literally the thinner milk, skimmed from the top of the milk, just like Cheese is made from the thicker part of the milk, that is then curtled. So in a way, they come from the same thing but are not, in exact meaning, the 'same' thing.
Whole milk is from the middle milk, 2% is watered down, and skim milk is far thinner, and not as rich. It's like comparing Half and Half to Heavy Cream and then calling them the same thing.

You know if you mix whole milk and skim milk, you get something close to 2%

So skim milk is the plasma, whole milk is the buffy coat, and thick milk(for cheese) is the red blood cells xd
