Read some material sometime, Des. You'll find that's how it's written.
Most dialects aren't written, though, so it's not surprizing that you don't recognize it. Like german accents, french accents, most of those are rarely written properly as well, because author's have such a hard time coming up with the correct american pronounciation of the words.
The last book I read with an actual dialect was Charles dicken's. However, graphic novels and comic books are much more... energetic with how to write something out like a dialect.
Seriously, you dont' see "fery gut" in a book. Nor will you 'hear' cajun accents when you read it. Doesn't mean that's not how it's really written, either.

Hence why it's not easy to do. Although pool sticks are not my weapon of choice. They break so easily; I prefer basebal bats because it takes more than a good crack over the head to break 'em.
