I can't wait until I get to go on holiday. We're off to Gran Canaria over Easter, but for the moment, I'm all cheesed out! Cheese and crackers for dinner, cheesecake for desert, followed by Biology A-level coursework on the coagulation of the five casein proteins found in cows' milk as a result of the addition of bovine chymosin (rennin), and the effect of the concentration of calcium ions on said coagulation.
