To supplement what strawberrie said,
when vincent was shot by Hojo, Hojo also changed his very chemestry. But he did NOT replace his arm or anything like that. The gaunlet is just there for what you could consider defense. (or offensive depending how you think about it.))

i belived it was severed in a freak accident and the metel has a reacton with the mako that his arm was severed thet turns him into a monster
