I can't really decide, but I love Homer (Duh XD) Moe, Apu!, and Grandpa are the ones I can think of.

The crazy cat lady. I just love it how she randomly appears in some episodes, throwing cats... and then in that one episode she was sane for like... a few seconds roflmao.
