I'd probably be power hungry and pick sith at first kind of like Annakin, but would hopefully see the error in my ways and chose jedi to be redeemed in the end!

Maybe Sora Bulq; he mastered seven forms of lightsaber combat ( burning_eyes ) and was trained in both the ways of the Jedi and Sith.

obi-wan for sure. he was in on some of the biggest (and sweetest) battles in
the series, and he's the only living character to survive through to episode 4.
i would really love to know what he went through to go into hiding and what
happened while he waited for something to happen.

han should be an honorable mention jedi, i've decided!
he's just as epic as the rest of them if not more. he was the reason they were
able to destroy the first death star.

Jedi and Sith are cool, but lets face it. There are thousands of other force sensitive orders out there. They may not have as much influential power, but they still existed at one point in time. For example, who knew that these guys ever existed? Or how about the Sorcerers of Tund? That being said, I would probably be Kyp Durron.
