Knives isn't insane. Far from it.
He is very disturbed by the fact that humans use his kin as energy. Energy extraction from plants is a PAINFUL process, and humans do it until the plants literally explode from the inside after using up all their life force (their life force is the energy humans use to run their machines to generate food/electricity...etc).
Knives wants to save all the plants and create a new world with them as the dominate species. He believes the plants are evolved beyond humans, and hates them in general for not co-existing with Plants without making them suffer their own own existence, where in the first place he didn't think humans should exist ANYWAYS since they're lower lifeforms.
Knives is also petrified with humans because of an incident in is past involving the first independent plant (plants that can walk and talk...etc. Hint. Vash and Knives were the 2nd and 3rd of these type to ever exist). Which, apparently, was their blood-related sister.
