Give them enough time and they would. Since everything in the SW universe is blasterbase, it pretty much would be pretty simple for them to adapt to the energy which they use.
That, and the borg have overcame the ST equivalent of the Force. About the only thing they couldn't adapt to is the lightsabers...
Star Wars transformers... That's a stupid commercial.

Borg suck. Everyone is of one mind as a collective. Imagine how dull and boring that would be.
