The character I'm considering playing isn't big on war, he just didn't want to leave the Republic in a state of (metaphorical or literal) disrepair.

You could try doing actual Jedi stuff. You know, like upholding the law, negotiating peace and encouraging wisdom.

Isn't that why they exiled themselves to Typhon? Because they wanted to get away from doing all that? The Confederates aren't exactly on good terms with them, and the republic knights vs. jedi debate made them rather out of the republican loop?

They left the Republic because it's hardly the sole government in the galaxy, so they want to keep the peace between all factions neutrally.

Is it really fair to say that the jedi can operate that neutrally though? She does bring up a point that neither of the two major political powers really enjoy the Jedi. Acting like a cop might get them to be considered vigilantes at best.
