Greys are produced when you have someone who is unable to go to either Jedi or sith, due to rules being broken. A compassionate sith pretty much describes them.
Greys probably are what you'd call a Neutral force user, meaning they are probably the ones who use the force as a tool for justice, rather than a life force. Often, they attempt to disguise the use of the dark side by attempting to justify their actions under the machiavellian means.
I guess you could call them people who actually practice potentium.

The Order of the Jedi once was simply a collection of Philosophers and Scholars who studied the Force before they became permanently linked to the Republic and focused on the light side.
