You can drive one just fine. The scout troopers you were fighting were flying them just fine. Here are their stats. Replace the scout trooper bonuses with your own.

It will take a few hours and two Mechanics checks to clear out all the crap in the speeder and bring it up to snuff.

It will take about 6 hours to bring Sish and Ember back to full Health.
