Assuming the storyline stayed the same, the main character would be Tifa or Barrett. Zack's dead, Aeris dies, and having Sephiroth as a main character would be difficult since he's possessed/insane.

Aeris. You got to play her once as a main player! (Aeris,Barrett,RedXIII/Nanaki team boss battle) And she does have a part in the story too! If not Tifa. 100% NOT CAIT SITH!!!! Well being Sephiorht like some ppl said would be too weird. The storyline would be weird like hell.

The game wouldnt be the same at all without Cloud as the main character. Its his connections that lead to many of the key events in the game and storyline as we know it.
Almost every event is influenced by Clouds specific choices and presence in the story, so not having him as the main character would jar the story into such a different ballpark it may not be considered as enjoyable.

Barret because he pimp like that and he is like the only black character...
be nice to have a black main character for once ya know (especially since he curses like a sailor)
Barret = Fun
or sephiroth because he is so pimp to and evil with a good background story ninja

Since Mr. Vincent Valentine and Mr. Zack Fair already have their own games, I'd have to say Aerith or Tifa.

Probably Jesse.
That's of course saying she survives the sector 7 blast.
It would be interesting because after that she is fueled by revenge then she learns that a super-soldier of the past is out to destroy the world.
IT would of made the game EXTREEMLY interesting. But through that Aeris wouldn't be in the story.
