Well considering Bahamut has been in FF since... 2, I think (and has been my favourite since then) I would normally go for him.
But if their is one thing I'll give FFX credit for, aside from the battle system and Lulu, is the awesome summons (or Aeons, whatever).
I can't seem to pick one so I'll go with Bahamut, Anima and Valefor simply because Valefor was a bit different (and a purty burdy xd )

I love yojimbo because of his sheer power. Just pay like 100 gil (you earn about a thousand per battle anyway) and he deals 8000 to all enemies. My favorite thing is that the other summons are pulled out of portals by Yuna, but Yojimbo kinda does the opposite. PS DOGGIE!!!
