I think they use citrus and pine because they're overbearing scents. Like, to keep stupid people from drinking it. Or maybe because they want people to associate those scents with cleanliness, or maybe because making dish soap smell like you dried it with the insides of a lemon wasn't enough. :D I like the first idea, that somehow it's a defense reflex. Humans won't drink something that bombards their olfactory system.

Pine air fresheners have been the staple forever, and the phrase 'lemony fresh' is older than Space Jam.
