Currently, I like Naruto a lot, if the fandom pisses me off (actually, that goes for most series). The fights scenes are (were) well choreographed in my opinion and the side characters especially are pretty cool. Some things piss me off about it, but meh.
Otherwise, my all time favorite would have to be Neon Genesis Evangelion, which I found fascinating on so many levels. It's a great series to watch, and I'd reccommend it.
Another good one for humor is Excel Saga, which is the most random, most humerous J-anime ever. It's hilarious! Each episode parodies something different. They have an entire episode parodying bishoujo (pretty girl) anime by not showing a single male in the entire episode and other stuff like that.

Plot devices can be a boon when they work in your favor, but you have to be careful of Austenization.
