Hot and Sour Soup
Boil up some chicken broth, using stock, or cubes, or canned (diluted 1/2 1/2 if canned)
Cut up matchstick sized pieces of the following:
arrow Pork arrow Tiger Lily Buds (no need to cut, they're already the proper size, just rinse them first) arrow Chinese Mushrooms (they come dried. soak in near-boiling water for a few mins first, keep the mushroom flavored water for the soup, then cut off the stems and discard, then slice) arrow Bamboo Shoots arrow Elephant Ear Fungus (might also be called other things. they come dried, so soak in hot water for a few mins first, no need to cut, I don't think) arrow Semi-firm or Firm Tofu arrow Minced Green Onions
Add the mushroom water (but not the fungus water), pork, lily buds, chinese mushrooms, fungus, and bamboo shoots to the broth
Add some salt, soy sauce, vinegar, and white pepper to taste (a few tablespoons maybe?) (white pepper instead of chili oil or other things to make the 'hot' is my mom's secret ingredient!)
Add tofu, which may cool the soup, so it will have to be brought up to boil again
Combine some cornstarch and water in a small separate bowl, stir together, and then dribble to broth to thicken (restaurants thicken their soup WAYYY too much in our opinion)
Mix 2 or 3 eggs in a separate bowl, and then dribble this slowly into the boiling soup (makes kind of like egg-drop soup)
Add green onions, and then just a smidge of Sesame Oil, then boil only 1 minute, and then remove from heat (green onions will yellow if boiled too long, I think she said)

Red Potato and Green Beans
Bring a pot of unsalted water to boil, then add ten or more baby red potatoes, skin on, into the pot and let that boil until a fork inserted into the center of a potato goes in easily. Remove from heat, drain potatoes and let cool. (You could actually halve the potatoes before boiling resulting in less cooking time.) Fill a large bowl with ice water and set aside. Bring another pot of unsalted water to a boil, then, add at least a pound of green beans (I think at least a pound, maybe more or less) that have been washed, and the ends have been trimmed off. Let this boil until the green beans are cooked to your liking. I tend to cook them long enough for them to be just past al dente. Remove from heat, drain, then, plunge into cold water to keep them from cooking longer and turning a sad looking green. Once the potatoes are cool, slice them into bite size chunks, (if you didn’t do that prior to boiling) and place them into a large bowl, drain the green beans, pat dry with paper towels and add them to the potatoes. Dice a medium sized red onion (or half a red onion, depending on taste) and add that to the bowl of beans and potatoes. Drizzle with extra virgin olive oil, then, add the juice of a lemon, red wine vinegar, salt and fresh ground black pepper to taste. These last step depends on how weak or strong you like your vinaigrette, its very important to taste as you go, adding as needed rather than dumping too much in the beginning. Mince a generous amount of fresh parsley and add to the salad. Toss well to coat everything, and serve either room temperature or chilled.

OMG that potato recipe looks so yummy! i'M Totally making that someday...not for thanksgiving tho cuz unfortunately our families are all traditional eaters and anything out of the ordinary will freak them out...it's bad enough for Kevin's family we have Mexican stuff every year lol
Which brings me to my recipe for thanksgiving...
Jalapeno Cheese Corn Bread.
Assemble your corn bread however you do. I use 2 boxes Jiffy corn muffin mix Add 3 jalapenos finely diced (i chop mine in my blender) Add 8oz colby jack blend shredded cheese Add 1 can cream style corn (optional) mix well
Butter pan (I use a cast iron skillet) Pour batter into pan Cook according to directions for corn bread recipe 5 minutes before done pull out of oven and sprinkle with another 8oz colby jack shredded cheese all over top of corn bread put back in oven for last 5 minutes until cheese is nice and melty
cut and enjoy!

MysticfawN My mom made a comment last night about how odd having potstickers for thanksgiving was, but then Jenni, Jason and I all agreed that it doesn't feel like thanksgiving WITHOUT potstickers! We've had then the last several years, so it's the one thing I NEED to have at thanksgiving. Yea we absolutely have to have tamales @ our thanksgiving feast. We buy them from a shop in Detroit that has the best...wednesday before thanksgiving if you go there the line is around the block from people getting them. I'll have to figure out a way to send you some lol. MysticfawN OMG I just realized there was no cranberry sauce! I'll ask my mom.. I bet she forgot to open the cans! Good thing we're going back again today for another leftovers feast, followed by tomorrow here! LMAO rofl we did that! We went out and bought like 3 cans of cranberry sauce so we would be sure to have enough and when the dinner was over and everyone was gone I remembered i had put them in the fridge to get cold and forgot to open them. We did the same thing last year too lol
